Ingredients:
1 garlic clove minced
1 cup brown rice (or any rice you’d like to use)
2 tbl butter
1-2 cups frozen peppers and onions
1 can diced tomatoes
2-3 tbl cajun spice blend
Water or broth for the rice
Shrimp
You’ll Need:
Saucepan with a Lid
Directions:
Melt the butter in a saucepan over medium heat. Add the minced garlic and rice. Mix together and sautee till garlic is fragrant. Add the peppers and onion blend. Add water (the amount of water or broth the rice would need to cook per its directions). Stir in the cajun spice blend, amount based on your preference. Put the lid on and let simmer for 15 minutes. Uncover, stir and add Shrimp. Cover and let simmer for 15 minutes more. Stir in the tomatoes. Serve!
This is a pretty customize-able and incredibly easy. I love the one pot recipes, it makes cleaning up much easier. I usually use vegetable broth to add an extra kick of flavor and nutrients. You can most likely use fresh peppers and tomatoes, although I haven’t tried it yet. I bet it would be good with a white fish too.
